Our story

Beginning and evolution

Pandolio was founded in the late 90s as an off-shoot of the Franco Falvio & Andrea F.lli snc company, which was in the food industry since the 1960. Pandolio’s Vision begins with the research, recovery and enhancement of traditional recipes.
BRAND

The Brand begins with the Pandolio cake, a contemporary evolution of the ancient Stroscia, a sweet which, tradition has it, must be broken with your hands; a symbol of absolute conviviality.

This Ligurian sweet represents the rediscovery of the harmony, not just flavors, of the typical rituals of poor cultures in the everyday life of peasants, sailors, artisans.

Creative sweets

Creative evolution and our continuous research have led us to the production of Pandolietti biscuits, which come in their 7 flavor variants to be truly consumed at any moment of the day, one after the other.

They are flanked by the aforementioned Pandolio Cake or Biscuit Cake, the Sfogliatine - the only product with butter - the famous Pan del Pescatore, also known as Genoese Bread.

Savory appetizers

Pandolio’s latest products are the Salatini (Savory appetizers): these too are handmade with olive oil. The Salati Pandolietti are fantastic when paired with meats and cheeses and unparalleled if eaten alone.

The savory appetizers line, like the cake or the lemon pandolietti, do not contain milk or milk derivatives, thus allowing sweet and savory moments as well to those who are lactose intolerant.

Artisan quality

Our mission is to offer Ligurian products, while respecting the younger generation’s changing tastes, with a keen eye to healthy nutrition. Our aim is to revitalize an old sweet from the Ligurian hinterland, which has become a novelty on the national and international markets, by using olive oil: a key element in the Mediterranean diet. Our code of ethics is based on three fundamental cornerstones:

  • Oven cooked using traditional methods

After our success was confirmed locally and regionally, both the domestic market and the international market began appreciating and loving this traditional Ligurian product right away. The collaboration undertaken with Eataly has been invaluable. Eataly is an extraordinary company founded by the visionary intuition of Oscar Farinetti. Working with Eataly allows us to follow Farinetti in his path of global expansion.
