Description: food for travelers and fishermen, focaccia was born around the year 1000 in Genoa, during the long waiting times that bakers had to face on working nights. Hours deceived by baking directly on the base of the oven pieces of leavened dough, which once cooked were eaten in company perhaps stuffed with vegetables, meats or cheeses, accompanying the classic bianchetto (glass of white wine).
